β - carotene (C40H56) is one of the carotenoids, an orange yellow lipid soluble compound, which is the most common and stable natural pigment in nature. Belonging to a family of natural chemicals (such as carotenoids or carotenoids). It is abundant in plants, giving fruits and vegetables a full yellow and orange color. The appearance of the pure product is a crystalline powder ranging from reddish purple to dark red, with a slight peculiar odor. β - carotene dilute solution is orange yellow and easily soluble in organic solvents such as dichloromethane, chloroform, and carbon disulfide. When the concentration of the solution increases, it may appear orange, but due to the polarity of the solvent, it may appear slightly red. Unstable when exposed to oxygen, heat, and light. β - carotene is the most common isomer of carotene. Conjugated double bonds composed of isoprene residues as units belong to polyene pigments. A crystal or crystalline powder that appears as a dark red purple to dark red glossy rhombic or plate-like microcrystalline. There is a slight odor and odor. Insoluble in water, propylene glycol, glycerol, acids, and bases, soluble in carbon disulfide, benzene, and chloroform, slightly soluble in ether, petroleum ether, cyclohexane, and vegetable oil, almost insoluble in methanol and ethanol.
